01 / ABOUT THE PLACE

About this place

Ducking through a slightly low doorway leads into a rustic, traditional farmhouse-inspired interior that feels insulated from the surrounding city bustle. The core appeal of Ikebukuro Teshigotoya (池袋 てしごとや) lies in its extensive cellar of sake and the varied spread of dishes crafted to complement every pour. From everyday house staples to junmai ginjo and daiginjo bottlings, choices can be ordered by the half-measure (han-go) as well as the standard pour, making it easy to sample and compare different profiles side by side.

Once seated, an ideal opener is the sea bream and Kujo scallions grilled over hoba miso at the table. While the seasoned miso simmers fragrantly atop the dried magnolia leaf, diners can sip a crisp dry sake or cold beer, then lightly toss the scallions and sea bream together just as the aromas peak. Interspersing these hot plates with quick drinking snacks, such as shark cartilage tossed in sour plum or mozzarella cured in barley miso, helps establish an effortless pace.

Seafood is a clear specialty, offering binchotan charcoal-grilled items like tilefish (amadai) and rockfish (mebaru) alongside whole fish simmered in sweet-savory broth to order. Charred, crispy-skinned fish harmonizes with clean junmai sake, while the deep braising juices and salt-stewed Kuroge Wagyu offal call for rounder, umami-forward regional brews, inviting a new pairing with each plate.

Meat selections give diners ample latitude to steer the meal, featuring juicy Daisen chicken seasoned with coarse salt and mochibuta pork grilled over magnolia leaf with awamori-infused miso. For the finish, options range from smooth Himi udon served hot or cold to seafood ankake fried noodles, or even a jasmine shiratama anmitsu dessert to close on an unhurried note.

Lined with energetic counter seating and table arrangements, the room accommodates casual group dinners just as comfortably as two sake enthusiasts settling in for an evening of conversation. Because dinner service tends to fill up quickly, reserving a table beforehand is recommended.
